2lbsRedskin or yellow potatoes
1lbFresh green beens
Olive oil
Salt and pepper
Cooking Instructions

Preheat oven to 425, or convection oven to 400.

Line your largest sheet pan with foil and spray, or parchment paper.

Scrub and dice potatoes. Let sit on paper towels a few minutes to make sure they’re dry.

Wash and dry green beans, cut in half if desired.

Dice chicken into bite sized pieces.

In a large bowl, toss chicken, potatoes, and beans together. Be sure everything is coated well - add a drizzle of olive oil if necessary. Add a little salt and pepper if you have it.

Dump on to the sheet pan. Do not crowd. Put cut sides of potatoes down for browning.

Place in preheated oven for approximately 25 minutes. Ovens vary.

Enjoy a glass of wine until the timer goes off.
